Smoked Jowl Soup

A rich, smoky, and hearty soup perfect for a cozy meal.

Ingredients:

  • ½ lb smoked jowls, diced
  • 1 onion, diced
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 2 cloves garlic, minced
  • 6 cups chicken or vegetable broth
  • 1 bay leaf, 1 tsp thyme, ½ tsp black pepper
  • Salt to taste
  • Optional: 1 cup diced potatoes, 1 can white beans, ½ cup lentils, 1 cup greens

Instructions:

  1. Render Jowls: Cook diced jowls in a pot over medium heat until crispy (5-7 min). Set some aside for garnish.
  2. Sauté Veggies: Add onions, carrots, and celery, cooking until softened. Stir in garlic.
  3. Simmer: Add broth, bay leaf, thyme, and black pepper. Simmer for 30-40 minutes.
  4. Add Optional Ingredients: Potatoes, beans, or lentils go in now; greens in the last 5 minutes.
  5. Serve: Remove bay leaf, adjust seasoning, and top with crispy jowl bits.

Pair with cornbread or crusty bread. Enjoy! 🍲
