Chinese Pork Liver with Soy-Ginger Sauce
Prep Time: 15 minutes
Cook Time: 10 minutes
Serves: 3–4
Ingredients
1/2 lb pork liver, thinly sliced
2 tablespoons soy sauce
1 tablespoon oyster sauce
1 tablespoon Shaoxing wine (or dry sherry)
1 teaspoon sesame oil
1 teaspoon cornstarch
1 tablespoon fresh ginger, julienned
2 garlic cloves, minced
1/2 onion, sliced
1 scallion, chopped
2 tablespoons vegetable oil
2 tablespoons water
Instructions
Rinse pork liver slices in water with a splash of vinegar to remove impurities, then drain well.
In a bowl, marinate liver with soy sauce, oyster sauce, Shaoxing wine, sesame oil, and cornstarch for 10 minutes.
Heat oil in a wok or pan over medium-high heat.
Add garlic, ginger, and onions and stir-fry for 30 seconds until fragrant.
Add the marinated pork liver and stir-fry quickly for 2–3 minutes.
Add a couple tablespoons of water to create a light sauce and stir well.
Toss in chopped scallions and cook for another 30 seconds.
**Serve hot with steamed rice.**
