Comforting Pork and Vegetable Soup

Serves: 4–6

Ingredients
1 lb pork shoulder or pork ribs, cut into chunks
1 tablespoon vegetable oil
1 onion, chopped
2 garlic cloves, minced
2 carrots, sliced
2 potatoes, diced
1 cup cabbage, chopped
1 stalk celery, chopped
6 cups water or chicken broth
1 teaspoon salt
½ teaspoon black pepper
1 bay leaf
1 tablespoon soy sauce (optional for extra flavor)
Chopped green onions or parsley for garnish

Instructions
Step 1
Heat oil in a large pot over medium heat. Add chopped onion and garlic, sauté for 2–3 minutes until fragrant.

Step 2
Add pork chunks and cook until lightly browned on all sides, about 5–7 minutes.

Step 3
Pour in water or broth. Add salt, pepper, bay leaf, and soy sauce (if using). Bring to a boil, then reduce heat to low. Cover and simmer for 45 minutes to 1 hour, until pork is tender.

Step 4
Add carrots, potatoes, celery, and cabbage. Simmer for another 20–25 minutes until vegetables are soft.

Step 5
Taste and adjust seasoning if needed. Remove bay leaf. Serve hot, garnished with green onions or parsley.
