Spicy Miso Pork Soup

Ingredients
1 tablespoon sesame oil
1/2 pound ground pork
2 cloves garlic, minced
1 tablespoon fresh ginger, grated
2 tablespoons red miso paste
1 tablespoon gochujang or chili garlic sauce (adjust to taste)
1 tablespoon soy sauce
1 teaspoon rice vinegar
1/2 teaspoon sugar
4 cups chicken or pork broth
1 cup water
1 cup napa cabbage, chopped
1/2 cup mushrooms (shiitake or button), sliced
1 green onion, chopped
Optional: tofu cubes, chili flakes, sesame seeds
Instructions

Heat sesame oil in a pot over medium heat. Add ground pork and cook until browned, breaking it apart with a spoon.

Add garlic and ginger. Stir and sauté for about 1 minute until fragrant.

Mix in the miso paste and gochujang. Stir until the pork is well coated.

Add soy sauce, rice vinegar, and sugar. Stir to combine.

Pour in broth and water. Bring to a boil, then reduce to a simmer.

Add cabbage and mushrooms. Simmer for 10–15 minutes, until vegetables are tender and the soup is flavorful.

Taste and adjust heat level with more chili sauce or flakes if desired.

Serve hot, topped with green onions, sesame seeds, or tofu if using.
