Herb-Crusted Pork Loin Roast

Ingredients

1 (3–4 lb) pork loin roast

2 tablespoons olive oil

1 tablespoon salt

1 teaspoon black pepper

1 tablespoon garlic powder

1 tablespoon chopped fresh rosemary (or 1 tsp dried)

1 tablespoon chopped fresh thyme (or 1 tsp dried)

4 cloves garlic, smashed

1 onion, quartered

1 cup chicken broth


Instructions

1. Preheat your oven to 375°F.

2. Pat the pork loin dry with paper towels. In a small bowl, mix olive oil, salt, pepper, garlic powder, rosemary, and thyme.

3. Rub the seasoning mix all over the pork loin.

4. Place smashed garlic and onion in the bottom of a roasting pan. Set the pork on top, fat side up. Pour chicken broth into the pan.

5. Roast uncovered for about 60–75 minutes, or until the internal temperature reaches 145°F.

6. Remove from oven and let rest for 10 minutes before slicing.

Serve with roasted veggies or mashed potatoes for a hearty, comforting meal.
