Porchetta-Style Roast Pork

A savory, herb-packed pork roast inspired by the classic Italian porchetta. Crispy skin on the outside, juicy and flavorful on the inside—this roast is a centerpiece dish that’s easier to make than it looks.

Ingredients

  • 1 skin-on, boneless pork belly (about 5 pounds)

  • 1½ tablespoons kosher salt

  • 1 tablespoon freshly ground black pepper

  • 2 tablespoons fennel seeds, toasted and lightly crushed

  • 1 tablespoon crushed red pepper flakes

  • 8 garlic cloves, minced

  • 1 tablespoon chopped fresh rosemary

  • 1 tablespoon chopped fresh thyme

  • Zest of 1 lemon

  • Olive oil (as needed)

  • Butcher’s twine

Preparation

  1. Lay the pork belly skin-side down on a cutting board. Score the meat side in a crisscross pattern, being careful not to cut through the skin. This helps the seasoning absorb deeper into the meat.

  2. In a small bowl, combine salt, pepper, fennel seeds, red pepper flakes, garlic, rosemary, thyme, and lemon zest. Rub this mixture evenly all over the meat side of the pork belly.

  3. Roll the pork belly tightly into a log, skin-side out. Tie it snugly in several places using butcher’s twine.

  4. Place the pork roll on a wire rack set over a baking sheet. Let it rest uncovered in the refrigerator overnight or for at least 8 hours. This helps dry the skin for better crisping during roasting.

  5. When ready to cook, preheat your oven to 300°F (150°C). Let the pork sit at room temperature for 30 minutes. Roast for about 2½ to 3 hours, or until the internal temperature reaches 160°F (71°C).

  6. Increase the oven temperature to 475°F (245°C) and roast for an additional 20 to 30 minutes to crisp up the skin. Keep a close eye to avoid burning.

  7. Remove the porchetta from the oven and let it rest for 15 to 20 minutes before slicing.

  8. Slice into thick rounds and serve with roasted vegetables, mustard, or crusty bread.
