7. 1 bay leaf

8. 1 teaspoon dried thyme

9. 8 cups water or low-sodium chicken broth

10. Salt and black pepper to taste

Instructions

Prepare the Base
In a large stockpot or Dutch oven, heat a splash of oil over medium heat. Add onion, carrot, and celery. Sauté for 5–7 minutes until vegetables begin to soften. Add garlic and cook for another minute.
