Gramma's Meatball Recipe

Ingredients

• 1 pound ground beef

• 1 pound ground pork (preferably pasture-raised, like Ex Libris Farm pork)

1 cup breadcrumbs (panko or regular)

1/2 cup grated Parmesan cheese

 2 eggs

 4 garlic cloves, minced

 4 tablespoons fresh parsley, chopped (or 1 teaspoon dried)

 2 teaspoon onion powder

 2 teaspoon dried oregano

 2 teaspoon dried basil

1 teaspoon salt

1 teaspoon black pepper

 

Instructions

1. Prepare the Meatball Mixture:

In a large bowl, combine the ground pork, beef, breadcrumbs, Parmesan cheese, egg, garlic, parsley, onion powder, oregano, salt, and pepper. Mix gently with your hands until just combined.

2. Shape the Meatballs:

Using your hands, form the mixture into 1-inch meatballs. Place them on a parchment-lined baking sheet or plate.

3. Cook the Meatballs:

Baking: Preheat the oven to 375°F. Arrange the meatballs on a baking sheet and bake for 15–20 minutes, until fully cooked.

4. Serve:

Toss the meatballs with marinara sauce and serve over spaghetti.
