Bourbon Apricot Glaze Recipe

We developed this to go with our smoked hams. You'll notice there's no salt - the hams tend to be salty and smokey on their own. The sweetness here is designed to compliment the deep salty, smokey flavor of our smoked hams.
Ingredients
- 1/4 cup bourbon (I like Maker's Mark for this)
- 1/4 cup maple syrup
- 1/2 cup apricot jam
- 1 cup brown sugar
- 4 tbsp butter
Instructions
Combine the bourbon and brown sugar. Let it cook down to about half, allowing the alcohol to cook out of the bourbon. Add in the remaining ingredients. If it is too thin, add in more brown sugar to get the right glazing consistency.
Brush the glaze generously over your ham during the last 20–35 minutes of baking. Reapply in the last 10 minutes for a beautifully caramelized, flavorful coating.
This glaze is also great as a dipping sauce or drizzled on individual servings.
